Interesting fact: during the first Napoleonic Wars the French government offered 12 thousand francs to anyone who'd invent a cheap and efficient method of food preservation. In 1809 Nicolas Alpert, a confectioner and brewer, noticed that food cooked in glass jars doesn't spoil. He didn't know what the cause of this was, because it was only 50 years later that Louis Pasteur discovered the "culprits" behind the process - microbes.
