Now to answer your questions! I knew that when a new rule in introduced to the story there will be lots of explaining later.

First the biting of the hand: Vinchi is (spoiler) the current Omega of the pack. He is the weakest of the three, but he is much stronger than Saturno. EX: He was able to snap Saturno's arms in chapter 10. Now compare it to a person trapping a scared raccoon or house cat in a corner. The person normally can beat the animal but when the animal is desperate the survival instincts take over and they can become very dangerous to the person. And bitting off something… compare it to getting a finger bit off by a snapping turtle.
2nd part: why didn't the hand have more of an impact on Saturno? Because Saturno got rid of the hand before it started to change him/her. The tongue was the only part taken in.

Kikaru: "But Saturno drew his being together to be able to stand….not as much as them? They're the same size-ish"
Saturno is build like a bird. Birds can stand but they don't weigh much.

Cthonic Cultist: "I wonder if Saturno will be clever enough to bring weapons from the human world? Like, guns or spears or something. Looks like he did for this."
Saturno has used human world weapons before. The Shish-kabob spear/stick in chapter 9 and a big stick against Vinchi in chapter 10. Nothing too fancy yet.

Kikaru: "But would (human weapons) really work? They're not exactly like normal creatures….I mean Maneater got like shot and zapped and blown up and "it was the fall that killed him""

Maybe it should have been it was the fall that did the finishing blow. Because of all those bullet holes and damage done to Man Eater already, it was not able to heal itself after the fall. Slashing and cutting up these creatures (blade weapons) does better damage than putting little holes through them (guns). Blunt weapons for impact and smashing do good too. But there is a greater weakness they have.
