Apart from a wedding arc, I also wanted to show the family back together and each of the dragons reacting to them having a new baby brother. So, Erin gets to see him here. Elizabeth's was off-screen, though she did get to talk to Rachel about him, so I count it.
Since dragons do have multiple generations, it's not rare to have a uncle/aunt the same age or younger than a niece/nephew. So…Sam Jr. being younger than Sophie and Beatrix is not unheard of.
