Most vampires have one of two characterizations, or occasionally a combination of the two: aloof, civilized, charming aristocrats, or bipolar raving crazy people. If you watch things like Blade, the vampires are unilaterally insane, and they tend to abruptly jump around in conversations and have no emotional control whatsoever, so they're constantly freaking out.
