I realize not all Vampire lore does the soul thing, but in Buffy: The Vampire Slayer, a vampire is a demon living in a human's corpse and is sustained by blood. Now, very few vampires chose not to take victims, such as Angel, but these vampires have their human souls restored. They're still vampires, but now they feel bad for their victims and tend to do good. Angel takes blood from the blood banks.
