If Ivy knew this about Spider-Man, she would've hit him with more and something more potent. See, real spiders can hold their breath for a long time, so that's one of Spider-Man's powers.
Also, I think Spider-Man's fast metabolism would probably counteract it pretty quickly. So in a sense, Poison Ivy really doesn't have much effect against Spider-Man in the long run. It's VERY difficult to poison Spider-Man.
