Her name is Shiklah and she's the Queen of the Undead. Deadpool was hired by Dracula to escort his bride to America. It was to unite two kingdoms. Spoiler, spoiler, spoiler…now they're married.
This happened during Deadpool Infinite: Gauntlet and the ceremony itself was held later in Deadpool #27. I guess that was more for the audience who didn't read Deadpool Infinite: Gauntlet. See, the Infinite series (online comic series) are canonical story arcs that they push off to the Marvel digital comics. They put out like one a week or one every two weeks or something.
There was another one where Iron Man colonizes the Moon and then realizes the moon material he'd been using was toxic and destroys his moon colony. 
They were both good stories…just not part of the main published series.
