I think I read somewhere where Groot's dialogue is so complicated that lesser beings cannot comprehend it and it comes off to those people as "I am Groot" because that's all they can comprehend.

Or something like that. I don't remember exactly. I do know that Groot has spoken before in the comics, but not in any I've read.
