When your parents don't know you can split yourself into many copies, you have to make sure there are no extras hanging about when they send you out for something.
Sure, when Eddie merges all the memories and experiences get shared, but there still has to be one "dominant" psyche. The rest of his experiences go "to the back of his mind" , so to speak.
And besides, whenever there's a choice to make, each Eddie wants to be the one to do the FUN stuff.
