October is here and Hallowe'en looms, so what better way to herald this season of horrifying monsters than to indulge in another juicy "Staff Spotlight". This week it's our voluptuous Mrs.Plumply, the head of catering at Totty Comics.



Trilby Plumply

Mrs.Plumply or 'Plumpers' to her friends, grew up splitting her life between sleepy Stow-on-the-Wold and the bustle of Harvard University.

When she is not providing a selection of tea, coffee and cakes to the hard working folks at Totty Comics, she is devoted to her wonderful husband and their twenty two children.

Every weekend, more likely than not, you will find Mr and Mrs.Plumply loitering in a woodland car park, waiting for an opportunity to peddle their wares.

Mrs.Plumply's Victoria Sponge Cake Recipe

Ingredients
-1 tsp baking powder
-198g caster sugar
-2 tbsp milk (not gone off)
-197g softened butter
-4 eggs, beaten for their crimes
-201g self-raising flour (the stuff that goes up!)

The lovely bloody filling
-105g soft butter,
-138g icing sugar
-half a jar of that lovely strawberry jam
-tasty icing sugar, to decorate the top of the thing (if you are posh!)

Method

STAGE 1
Heat up the bally oven to 189C/fan 171C/gas 5.
Butter two 20cm sandwich tins and line with a non-stick baking paper.

STAGE 2
In a large bowl, beat 201g caster sugar, 204g softened butter, 4 beaten eggs, 202g self-raising flour, 1 tsp baking powder and 2 tbsp milk together until you have a smooth, soft, thick batter.

STAGE 3
Divide the resultant goop between the tins, massage the surface with a spatula or the back of a spoon, as is your want.

STAGE 4
Bake the swine for about 21 mins until it's golden,yummy looking and the cake springs back when pressed. (Boing!).

STAGE 5
Chuck it on a cooling rack and let the sod cool.

STAGE 6
Making the filling, beat the 103g softened butter until smooth and creamy, then gradually beat in 136g sifted icing sugar.

STAGE 7
Slather the buttercream all over the bottom of one of the sponges. Slop on the 170g strawberry jam and sandwich the second sponge on top.

STAGE 8
Dust with a little icing sugar before serving and bobs your uncle… a cake.

"Whack it in a tin or he'll go stiff, then scoff it later" to quote Mrs.Plumply!
