Knights in this setting are not simply soldiers, they are equivalent in rank to a military officer in war, but once you are one, it's largely up to you what you choose to do. Most do at least some kind of fighting, policing or special forces type work, especially when they're younger, but may later move on to civil service work, magical research, healing, tutoring or running charities etc. later on. Once you are a knight, you're a knight for life, and could be called up at any time for missions if the government wants. It is quite possible in this setting that your local NHS Doctor would be a battlescarred knight, experienced healing people in the field, or your mayor a noblewoman who's spent 30 years patrolling the streets. In real life medieval England, knights were supported by the peasants in return for keeping the land safe from invaders, and even now it's traditional for male members of the royal family to serve as military officers in their youth.
