By "broken down and rebuilt" what she means is every single part of him, every inch, every molecule was completely destroyed and recreated, so there's a good chance there's really nothing left of whoever he once was. Though on the flip side of that, there does seem to be some core remaining, since his mind couldn't have been wiped completely clean. If it had been, he wouldn't remember how to talk, and not only does he know how to talk, he retained at least two languages. Also he knew that the gore surrounding him was a bad thing. If his mind was entirely gone, he would have woken up thinking that was just normal. He'd have no understanding of why it was bad.
Ugh, I can't imagine that being your first memory, though. You can start to see why he's so single minded in his pursuit.
You can also start to see why it is that the boetheri tolerate him.
